FISH, SCALLOPS, SQUID & MUSSELS
We use only the freshest and highest quality seafood. Our Tasmanian farmed Salmon, Bass Strait Scallops, Arrow Squid and Spring Bay Mussels are all sourced locally. These ingredients are sautéed in olive oil with organic garlic, tomatoes, organic sweet paprika and capsicum, infused with Persian saffron and seasoned with Tasman Sea Salt. The Calaspara Spanish Rice then absorbs the delicious flavours of these ingredients. Before serving, the Paella is sprinkled with fresh finely chopped parsley and the zest of lemon.​

 Mussels     ​Australian Blue Mussels, sourced from Spring Bay Seafoods on the East Coast of Tasmania.
100% Certified Organic and Friends of The Sea. Farmed mussels are a low carbon footprint source of protein. They do not require added feed because the filter their food from the natural water column. 

Salmon     Tasmanian farmed Atlantic Salmon and Ocean Trout, sourced from Tassal, Huon and Petuna, supplied by Ashmores Southern Seafoods.
Squid     Tasmanian caught Arrow Squid or Calamari (depending on season).
Scallops     Tasmanian landed scallops, caught in Bass Strait.   
Tomato Passata     Australian grown. 100% Certified Organic. 
Saffron     Persian Saffron, Certified Organic. 

Cream & Butter     Ashgrove Tasmania.
Herbs & Spices     Tasmanian grown organic garlic, parsley, dill and chilli. Ethically sourced paprika.
Lemon     Australian grown (Tasmanian when in season). 
Artisan Sourdough     Baked by Imago, local Hobart bakery. 
Wine     Local Tasmanian Sauvignon Blanc- Devils Corner or Ninth Island.  
Onions & Carrots     Tasmanian grown.
Salt     Tasman Sea Salt.
Rice     Calaspara from Spain.
Packaging     Supplied by Abel Pakk Tasmania, all 100% biodegradable.
